Make Your Own Fizzy Drink with Jun Tea

Jun Recipe & Directions
Prep Time
- Day 1 – 25 minutes
- Day 3/4 – 35 to 45 minutes depending on fruit used
Ingedients
- SCOBY
- Green Tea
- Honey
- Fruit – We used 3 1/2 Oranges

Instructions
Once you have a SCOBY you can make Jun. Remember that SCOBY does not like to be refrigerated. Be sure to keep your SCOBY in the tea covered with a cloth at a nice room temperature.
If you are getting your SCOBY for the first time see the below instructions.
1. Make Your Tea
Bring a large pot of water to a boil.
Turn off the burner and add 1/2 cup of green tea.
Next stir in 1/2 cup of honey per gallon of Jun.
Let the tea steep for about 10-15 minutes.
2. Prep Your Primary Fermentation
In your kitchen sink, strain tea into a gallon-glass jar and add enough ice to cool the tea down.
Once tea is cooled down add your SCOBY and cover with cloth.
Let sit for three days minimum.
3. On the 3rd or 4th Day – Prepare Your Fruit & Next Batch
On this day you’ll want to repeat steps 1 & 2 while you are completing steps 3 & 4. This will ensure you have a new batch to keep your SCOBY growing and more Fizzy drinks flowing.
Depending on what fruit you choose, preparation may differ.
Be sure to clean your fruit before using it.
For this recipe, we used a juicer and juiced three and a half oranges to fill one glass.
4. Bottle Your Tea
Reusable single serving glass bottles with lid/cap makes it easy to have your own fizzy drinks ready to go.
Make sure your bottles are clean before use.
Remove the SCOBY from your tea by placing it a glass bowl with a couple cups of the tea it has been in and cover the bowl with cloth.
Next, add the fruit juice of choice to the batch of tea and stir.
Use a ladle and funnel to assist with bottling and fill each bottle.
Lastly, place your SCOBY into the new cooled batch of tea from step 1 which was repeated in step 3.
Once you’ve filled your bottles secure them with their lid/cap, let them sit in room temperature for 24 hours then place in the refrigerator for enjoying.
